Happy Monday! 
Today as its my favorite day of the year tomorrow, I had to upload a pancake recipe! These pancakes are DELICIOUS, I honestly can't tell you how good they are-please give them a go you will fall in love with them as much as I have. They are the perfect mix of fluffy and crispy, soaked in agave, and topped with fruit or nuts they are the ultimate vegan pancake.

Makes 3-4 pancakes: Time 10 minutes 

Method:

  1. Firstly add your Aquafaba, and Agave Syrup to a bowl and mix well.
  2. Add the wet ingredients to the dry-this will help prevent lumps!
  3. Heat your pan to a medium to high heat and spray with oil-(this is optional but it helps prevent sticking! I use spray coconut oil) 
  4. Ladle on your mixture and wait until its appearance changes to a less glossy one all over.
  5. Use a spatular going round the edges to help lift the pancakes and flip
  6. Cook on the other side for a minute and place on a plate.

See above for ideas to top your pancakes-I love the simple lemon and sugar with berries between my pancakes, but the caramelized pecans are also delicious!

Valentines Recipe Swap with Glowsteady

The Perfect Valentines Gift 

So a new series that Sophie (from Glowsteady) and I are starting is a recipe swap. We will be setting each other the task of creating one of our own recipes, or creating a recipe with ingredients given by the other person each month. 

This month Sophie set me the task of creating a Valentines recipe with:
dark chocolate, Oreos, coconut milk, and almonds
These Super Chocolatey Luxury Oreo Cookies were the result. To find out how to make them keep reading! 

I would highly recommend these oreo cookies for a valentines gift. You can so easily make them and then wrap them up nicely. They are the perfect gift whether your loved one is vegan or not, who doesn't love a handmade thoughtful gift especially when it involves chocolate and Oreos!?

Serves: 8

Time: 15 minutes prep, 12 minutes bake.

What You Will Need:

100g Dark Chocolate
60g Dairy Free Creme Fraiche
2 boxes Oreo thins
15g Sliced Almonds
3 tbsp coconut milk
1/4 cup almond milk
tsp Baking powder
75g rye flour 

To Make:

  1. Pre Heat Oven to 180c
  2. Melt 100g dark chocolate and 20g Creme fraiche- heat in microwave for 30 seconds and mix
  3. Break apart 16 oreos and add middle to a bowl with 20g (1 tbsp creme fraiche)
  4. Melt in microwave for 30 seconds, and stir to melt.
  5. Smash up the remaining biscuit part of the Oreo.
  6. Weigh out 75g Rye Flour, add baking powder, sliced almonds, crushed oreo and mix. 
  7. Add in almond milk, coconut milk, cream mixture and chocolate mixture.
  8. Cream together to create a sticky cookie dough. 
  9. Spoon out 8 portions of dough and pat down into rough cookie shape- it doesnt have to be neat!
  10. Place on baking tray in oven for 12 minutes. 
  11. In a bowl separate 8 more Oreo's with the centers in a bowl. 
  12. Add 20g of creme fraiche and melt as before. 
  13. Remove cookies from oven and wait for them to cool.
  14. Spoon over the white creme mix, to decorate.

Quick, Easy, Affordable Valentines Recipe

Whilst playing around with valentines ideas for my blog, I knew I needed to write a recipe that wasn't just about love and the 'perfect' valentines day. As a Twenty something year old Londoner striving for love and career success but finding single life and a string of dates not worth mentioning, of course I was naturally lead to the most relatable female character on the planet 'BRIDGET JONES'. I wanted to write a healthy recipe inspired by the iconic single lady, and a recreation of her 'BLUE STRING SOUP' seemed like the perfect idea..although this one contains no string and is super delicious.

So here is my recipe for valentines 2018. Dedicated to all the singletons out there, trying to succeed at life and love. Here's to a fabulous Valentines day filled with friendship, love and a super yummy bowl of  Blue String Soup Blueberry and Banana Smoothie.

The Health Benefits:

Blueberries are filled with antioxidants, which fight free radicles helping to keep your cells in tip top condition. The banana provides essential potassium and carbohydrate, whilst the oats provide fiber, preventing the fast absorption of the sugars, reducing blood sugar spikes and keeping you fuller for longer. 


The recipe:

Ingredients


  • 1 cup Frozen Blueberries
  • 1 1/2 Bananas 
  • 25g Porridge Oats
  • 3 tbsp almond milk 
Method:

Add the Blueberries, Banana, and Oats to a food processor with the almond milk. 
Blitz until smooth, add more almond milk if needed.
Remove from processor and add toppings (banana, oats, berries, nut butter, seeds).
Enjoy!

The Perfect Sunday Morning Pancakes (GF, DF, VG)

THE ULTIMATE SUNDAY PANCAKES 

Perfect for a lazy start to the day 






What is a Sunday morning without pancakes? The best part of my weekend is taking a bit more time on my breakfast and having a non rushed start to the day. Working in retail I do still have to go to work but I start later meaning I get a more lazy start to the day.

These pancakes can be enjoyed whether you have a set weight loss goal in mind or if you just want a nutritious but delicious start to the day. 

What makes these Pancakes good for me?


They contain Banana an essential form of potassium and carbohydrate. The oats are a form of fiber, this prevents fast absorption of sugar into the blood stream preventing blood sugar spikes. Covered in nuts-an essential form of fat will satiate you and keep your hunger at bay for longer. 



The Recipe:

Ingredients:

25g Oats (sachet of golden syrup if you want a sweeter pancake)
1 large Banana Mashed
Xanthum Gum 
Baking Soda
Spray Oil to line pan

Toppings

Handful Mixed Nuts
Agave Nectar 
Handful Cranberries 
1/2 a banana to top 

Method:

Mash one banana
Mix in 25g porridge oats, baking soda, and Xanthum gum 
Spray a frying pan with a couple of sprays of Oil, heat on a medium high heat.
Add mix to pan and wait for mixture to become less shiny looking, approx 2 mins.
Flip pancake and cook on other side.

Remove from Pan and cover in agave nectar, banana, and cranberries.

Today I am sharing with you a super FESTIVE EDIBLE WREATH recipe! I wont lie this did take me a while to make and construct-but oh my was it worth it! The OREO cookies taste incredible by themselves, so even if you dont have the time to make the whole wreath recipe, its worth just making the cookies! 

The end result looks amazing and will impress all your friends... I cant wait for mine to try this tomorrow at my party!

Yesterday-as you will know if you read  BLOGMAS DAY 11-MY BIRTHDAY, & LONDON SHOPPING IN THE SNOW!  Then you will know I bought Vegan Baileys in Wholefoods. Baileys is something I have missed sooo much since going dairy free and to have it back in my life is honestly the dream! I have tried this Vegan Baileys by itself and its the most delicious thing ever! I can't fault it! I HAD to make a Baileys recipe with it so of course I went for a Baileys Hot Chocolate. I have added lots of vegan toppings such as vegan fudge, vegan marshmallows, oreo thins, and of course cocoa powder. I really hope you love this recipe as much as I do-Honestly its THE BEST hot chocolate I have ever tried *bold statement* but I love it so much.

It was honestly the most magical day-as we shopped in Harrods it was snowing. I felt like I had stepped out of a book or film. I couldn't believe how perfect it was. 

We started off the day visiting Peggy Porschen Cakes-Is this not the most Instagram worthy cafe on the planet!? With snow falling and the most stunning Christmas decorations surrounding me, I sipped on spiced apple tea.

The Top 15 Festive Films of all Time


Welcome to my first festive post of the year! I'm honestly so excited by all the christmas adverts on TV and the Christmas lights popping up here there and everywhere! There is nothing I love more this time of year than a festive film night. Cosying (is that even a word!?) up in a pair of christmas PJ's, getting my hot choc game ON and the fire burning, whilst sticking on a movie marathon of my fave films; its honestly so relaxing and fills my heart with Christmas joy!


Today I wanted to share my top Christmas films. I think these should be on everyone's radar this christmas and I'd love to know if you've watched any of them or what your go to Christmas Classics are.  MY CHRISTMAS MOVIE TOP 15
So here are my top 15 Christmas Films, and a short synopsis of why I personally LOVE them.

  1. The Holiday-By far my favorite film on the planet and a Christmas gem-with THE BEST film sound track on the planet. Delve into the Surrey countryside at Christmas, whilst journeying through the perils of love, and ending up at the most important gift of all...family. It may be predictable and a little cliche but who can't fall in love with Jude law as Mr napkin head, and Kate Winslet helping out an elderly gentleman at Christmas.                                                         
  2. Love Actually -This is a Christmas Classic, and if you haven't seen it where have you been? This film is both charming and hilarious, following the intertwined lives of a group of people just trying to get life right as it gets closer to christmas. Its a mix of everything touching on love, family, youth romance and some interesting nativity outfits...                                                                        
  3. Elf -Isn't Will Ferrell such a legend. He's hilarious, and so is Elf. It tells the tale of a boy brought up by elves, before discovering he doesn't really belong. We then follow his quest to finding his father and the task of fitting into the 'Real World'                                                                                     
  4. Nativity-Possibly the most heartwarming family film out there. Is there anything cuter than a group of kids putting on a nativity, striving to be the next best thing in hollywood, helped out by the ever enthusiastic Mr Poppy and a warm hearted but slightly less enthusiastic Mr Maddens.                                                                                                                                           
  5. Arthur Christmas-When a child is missed its down to little Arthur christmas to get ALL the presents delivered by christmas. Its magical, light hearted, and depicts perfectly the essence of christmas spirit.
  6. Bridget Jones-Possibly the most relatable character out there. I love Bridget Jones all year round but the christmas setting make it the perfect christmas film and I will always have it down as one of my festive faves-I need my Mark Darcy at Christmas.                                                 
  7. Miracle on 34th Street-The magic of christmas is brought to life in this film and puts any cynic in their place, as Santa is helped out by a lawyer and a little girl who go out of their way to prove that santa is real!                                                                                                                                     
  8. A Disney Movie-What's christmas without the magic of Disney!? I've put 101 Dalmatians in the pics above but I can watch any Disney film with a box of chocolates at christmas...they are the perfect family choice!                                                                                                               
  9. The Harry Potter Series- I personally love a pit of HP at christmas, especially the first two films as they are so magical. I feel like everyone needs a piece of Hogwarts; Harry, Ron and Hermione at Christmas.                                                                                                                 
  10. A Christmas Carol-There are so many different variants of this film and I think they are all great. Muppets christmas Carol is perfect for younger children, with narratives from the Muppets and catchy tunes to help tell the dickens classic. I personally enjoy the animated version.
  11. The Grinch -A Jim Carey Classic, this is a love it or hate it film that takes the watcher to whoville where little Cindy loo has to work a bit of christmas magic and cheer to warm the heart of the Grinch who’s heart is hardened to christmas after a bad experience as a child.             
  12. Home Alone - This is such a classic and never fails to make me laugh. An 8 year old is left home alone thinking his christmas wish has come true, until two burglars force him to come up with some creative ways of preventing the house from burglary!!                                                                                                                                            
  13. The Polar Express-I love this film, its another we always watch as a family at christmas and it's just adorable.                                                                                                                                    
  14. New Years Eve-Another of those films with a star studded cast. This one again follows couple's lives through new year's eve leading up to the big reveal of the NEW YEAR. Its also easy to watch and one you can stick on with the girls a festive drink and a few nibbles.                       
  15. Serendipity -Mum and I stay up late each year and watch this film. Its an easy watch and again maybe cliched but it's just so enjoyable and who doesn't wish for a bit of serendipity in their lives-especially at christmas

Livias Kitchen Millionaire Bites Review


Today I wanted to share these bites of deliciousness with you all. 
If you haven't been reading my blog for long, you may not be aware I suffer from Gastroparesis and a severe milk allergy, meaning that I have to be really careful with what I eat. 

Whether you suffer from any digestive problems, or you just want a natural tasty treat, these are most definitely for you.

Something I was addicted to as a child was Terry's Chocolate Orange. Since my diagnosis, I've not been able to go near one, so when I come across anything chocolate orange I am all over that show.

These millionaire shortbread come in 3 flavors; Salted Date Caramel (delicious), Almond and Raisin (I am yet to try but will get my hands on them soon!), and Chocolate Orange (Think thick jaffa cake centre on a delicious oaty base topped with creamy raw chocolate). 

So what are they?
'LK’s Raw Millionaire Bites are a nutritional twist on the classic millionaire shortbread. A crumbly oat base covered with a gooey date caramel, topped with smooth, rich dark raw chocolate. They are gluten, dairy and refined sugar free, with no additives or preservatives and full of delicious flavour.'-

Vegan Banana and Custard Cake

124 calories




This vegan banana and custard cake is an absolute gem, and I would highly recommend trying it out if you have some spare time and fancy a bake!

What you will need:
Dark brown Muscovado Sugar-50g
Self Raising Flour-150g
Custard Powder-50g for cake 
25g for icing 
Sunflower Spread-25g
Vegan egg-2
Spice-1tsp
Banana-2 medium 
Baking Powder-1 tsp
Icing sugar-60g 

Method:
Pre heat oven to 180 
Mix together all the dry ingredients.
Combine all the wet ingredients
Mix together the dry and wet ingredients until combined
Grease a cake pan and pour ingredients in.
Place in oven for 20 minutes 
Mix together icing sugar and 25g custard powder
Wait for cake to cool and add icing sugar on top.

Top Tips to Loose Weight-Based on Science

So anyone who is a regular at my blog will know my journey has been all about weight gain, but my understanding of nutrition, health and diet doesn't just cover weight gain and so I thought I would write a post for all you lovely people out there who are looking to shed a few lbs.

Initially, I would like to say please make sure you are loosing weight for the right reasons, if you feel you are a healthy weight and are looking to loose weight that is lower than what you know is healthy for you then I would highly encourage you to look at the mind website which covers all aspects of eating problems with self help and contacts.

This blog post is based on a scientific background, I have studied biology to a level and am now training as a nurse which has a highly scientific anatomy and physiology element.I have also spent a year under the eye of an accredited dietitian and have learnt a lot through her, all these tips will be based on what I have learnt and what I can pass on, please dont follow fad diets that dont have evidence to back them up they could do more damage then good!


TOP TIPS TO LOOSE WEIGHT:
1) Work out your basal metabolic rate- there are many calculators available online which can be used to work this out and this will give you a rough idea of what you should be eating to maintain a healthy weight.

2) Work out your daily calorie intake- Initially it is a good idea to keep a food diary either by journal or phone and roughly work out your daily intake of calories, it may be worth weighing portions just for a couple of days to get this as accurate as you can...but PLEASE dont stress over getting it exact!

3) Work an approximate weekly or daily calorie intake-In order to loose a lb a week most people will need to loose around 3,500 calories from their diet a week (around 500 cals a day). If this is going to take your calorie intake under 1,200 please consider a slower weight loss route, maybe 1/2 lb a week. If you begin to restrict calories too much your basal metabolic rate will drop. This will make loosing weight extremely hard as your body works more slowly to hold onto fat! 


4) Work out meals you love that fit your daily calorie intake and leave a few spare for healthy snacks! For example if your daily goal is 1,200 calories eat 300 at breakfast, and lunch, 400 at dinner and have 200 for a couple of 100 calorie snack or one larger 200 calorie snack. 

5) Healthy snacks:
Apples-these are not too sweet and release sugar more slowly into the blood stream lessening the sugar spike they have a fibrous skin which some of the sugar sticks to preventing it from being digested too quickly and causing a sugar spike and then slump!
Pears these are another great fruit to eat due to similar reasons as above!
Blueberries, these are packed full of anti oxidants that will help remove toxins from your system and keep you feeling healthy!
If you want a treat opt for popcorn which is just salted gain we want to prevent sugar spikes which can lead to you feeling hungry and tired, and try making healthy home bakes using egg, wholewheat flour, vanilla, almond milk and stevia- I have some great low cal recipes on my instagram

6) If you are a snacker separate your meals into snack sized portions and pick at those throughout the day.
There is nothing wrong with snacking and there is evidence that it can keep your basal metabolic rate high, you just need to make sure you are staying within your goals and snacking on the right foods. 

7) Find a good fitness plan that you love! In order to keep that basal metabolic rate up you need exercise! This promotes muscle preservation and muscle keeps that rate higher, it will also help to burn a few extra calories to help you on your way. Anyone who knows me knows my love for a Lucy Whydnam-Read work out which I have linked, they are super quick, are appropriate for all fitness levels, are easy to follow and she gets amazing results! Shes qualified and knows her stuff! But if home work outs arent for you get walking, swimming, cycling, dancing, or lifting weights anything that gets that booty moving!

Baked Gingerbread Doughnuts (Low Fat, Milk Free)-A Health Lovers Doughnut Dream


60g Mixed Fruit
30g Glace Cherries
1 tsp-Ginger
1/2 tsp-Mixed Spice 
1 tsp-Orange Extract
100g-Self raising flour 
2 tbsp-Almond Milk
1 egg 
1 tsp-Baking Powder 

  1. Start by pre-heating the oven to 180c. 
  2. Combine the mixed fruit, cherries, orange extract, almond milk and egg in a food processor/blender.
  3. Mix together the flour, ginger, mixed spice and baking powder and add the wet ingredients.
  4. Mix the ingredients until you have a thick but smooth batter, add more milk if it needs loosening slightly.
  5. spoon the mixture into a piping bag and pipe into a silicone doughnut mold. 
  6. Bake for ten minutes or until risen and browned. 
  7. remove from the oven and enjoy!
  8. They taste especially good with jam drizzled on top ;)

Low fat Vanilla and Maple Protein Pancakes (Milk and Lactose Free)


1 tbsp Vanilla Rice Protein Powder
1/2 tsp Baking Powder
1 Large egg
1 Large banana (mashed)
Maple Syrup

  • Mix the protein powder and Baking powder together. 
  • Crack in your egg and stir well ensuring a smooth consistency.
  • Mash half of the banana and add to the mix, getting the batter as smooth as possible.
  • Heat a not stick pan on high and ladle in the mixture. 
  • Once set all over, flip the pancake and cook on the other side for a further minute.
  • Remove from pan using a spatula, and pour over your maple syrup.
  • Enjoy!!
 (These can be easily made vegan by replacing the egg with a cup of aquafaba!)

Protein:
  • Pulsin Bars (I love the maple and peanut ones!)
  • Crunch nkd Bars (Apricot are the newest of the Crunch variety and they are currently my faves however I am also a huge fan of the strawberry and banana crunch bars...lets face it they are the dream)
  • Habas Fritas-Marks and Spencer 
  • Banana Bliss Bars-Tesco
  • Tru-Nut powdered peanut butter with chocolate- I sprinkle this over cereal, apples, bananas, and berries 


Carbs:
  • BREAD BREAD AND MORE BREAD! 

I genuinely live off bread it is my favourite thing on the planet. I go to Sainsburys and but their freshly baked loafs, my healthy option is their sourdough rye bread, however I do also love a bit of their farmhouse loaf and their sourdough loaf. 
  • Olive bread sticks-Marks and Spencer 
  • Giant wholemeal Pretzels-Sainsburys 
  • Salt and Vinegar Beetroot Crisps-Marks and Spencer
  • Soreen Banana Lunchbox Loafs
  • Berries, apples, and Bananas with powdered peanut butter 



Fats:
  • Dairy free pots-Marks and Spencer (I love their apricot and strawberry pots, soooooo much!)
  • Alpro plain soya yoghurt
  • Pecans 
  • Walnuts


Drinks:
  • Soya/Almond milk hot chocolate with Dairy milk chocolate powder (Yes it is dairy free despite its name, which definitely confused my brother and cousin!)
  • Soya/Almond Milk cappuccino
  • Rebel Kitchen Coffee

As someone who is very allergic to milk I often have to look out for vegan snacks that I can easily Pick up on the go! I love reading what other people find so I thought I would join in the conversation and share mine :)

(Due to my exceedingly sensitive stomach all of these products will also be low Garlic, Onion, and oat free whilst also being low fat as my digestive system really struggles to digest these. I do see a dietitian to make sure my diet is as wholesome as it can be with my bowel not digesting certain foods efficiently at the moment.)
